Ingredients: 1 lb. ricotta cheese (whole milk) 1 8 oz. container low fat lemon yogurt 2 eggs, at room temp 1/2 cup sugar 1/4 cup flour 3 tbsp. milk 1 tbsp. fresh lemon juice 2 tsp. lemon zest 1 unbaked pie crust (please use a homemade crust) 10 inches in size Fresh Strawberries for topping

Directions:© Preheat oven to 400 Have unbaked crust ready to accept filling. Mix all the ingredients together and beat on low speed for 3 - 4 minutes or till mixture is very creamy. Pour into crust. Place in oven and IMMEDIATELY reduce temp to 350 Bake for 45 minutes to 1 hour or until knife inserted in middle comes out clean Cool to room temp and refrigerate at least 2 hours before serving. Cut in slices and top with fruit. |
