1 lb. ricotta cheese (whole milk)
1 8 oz. container low fat lemon yogurt
2 eggs, at room temp
1/2 cup sugar
1/4 cup flour
3 tbsp. milk
1 tbsp. fresh lemon juice
2 tsp. lemon zest
1 unbaked pie crust (please use a homemade crust) 10 inches in size
Fresh Strawberries for topping

Preheat oven to 400
Have unbaked crust ready to accept filling.
Mix all the ingredients together and beat on low speed for 3 - 4 minutes or till mixture is very creamy. Pour into crust.
Place in oven and IMMEDIATELY reduce temp to 350
Bake for 45 minutes to 1 hour or until knife inserted in middle comes out clean
Cool to room temp and refrigerate at least 2 hours before serving.
Cut in slices and top with fruit.
