3 pounds of thin skin white potatoes, boiled (fork test for softness)
6 hard boiled eggs - chopped
4-5 celery stalks - diced
1/4 - 1/2 cup of white onion diced - depending on your taste
2 cups of mayonnaise
1/2 cup of hot water
1 1/2 tsp sugar
1 1/2 tsp white vinegar
salt & pepper to taste

Boil potatoes, once boiled peel and cut into large diced cubes. In a mixing bowl add the diced potatoes, chopped hard boil eggs, diced celery and onion. Mix together. In a seperate bowl, dissolve sugar, salt and pepper in hot water. Add mayo and vinegar and whisk until smooth. The dressing consistency should be thin. Pour dressing over potatoe mixture and mix, cover and refrigerate.
