Zucchini Cake Recipe

2 1/2 c flour
2 c sugar
1 1/2 tsp cinnamon
1 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
1 c oil
4 eggs
2 c grated zucchini
1/2 c walnuts


1 (8 oz) pkg cream cheese
1/4 c butter
1 T milk
1 tsp vanilla
2 c confectioner sugar

In bowl combine, flour, sugar, cinnamon, salt, baking powder and baking soda. Combine oil and eggs. Add to dry ingredients and mix well. Add zucchini. Stir until combined. Fold in nuts. Pour in greased pan and bake at 350 for 35-40 minutes.


In bowl beat cream cheese, butter, milk and vanilla. Add confectioner sugar and mix well. Frost cake. Sprinkle with nuts if desired. Store in refrigerator.
