16 mushrooms
1/2 cup italian style bread crumbs
1 stick of butter
2 eggs - slightly beated
1 tbs chopped parsley
salt & pepper
parmesan cheese

Directions:
Directions:
Break the stems out of the mushroom caps, trim the ends slightly and chop the stems fine. Saute' in butter and the let cool in a small bowl. Add the beated eggs and bread crumbs and mix together to achieve a thick paste-like constistency. Add a pinch of salt and pepper. Melt some butter and brush inside the mushroom caps. Using a teaspoon, fill each cap with a mound of stuffing and place on a baking sheet. Sprinkle parmesan cheese on each mushroom. Bake in the oven at 350 degrees for approx 15 minutes - serve hot.
