1/2 cup shortening
1 1/3 cups sugar
2 eggs unbeaten
1 tsp vanilla
2 cups flour (sifted)
1 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1/2 cup buttermilk
1 cup mashed bananas


Topping
10 tbsp brown sugar
4 tbsp cream (pet milk)
4 tbsp butter or 1/2 block

Directions:
Directions:
Cream butter and sugar. Add eggs and vanilla and beat 2 minutes. Add 2 cups sifted flour, baking powder, baking soda and salt. Sift again and add to mixture. Add buttermilk, beating for 2 more minutes. Fold in bananas and bake in 375º oven for 30 - 35 minutes.

To make the topping:
Combine and cook all ingredients until bubbles vigorously. Spread icing on cake, top with coconut and brown in oven. Chopped pecans are also added to coconut if desired.
