1 pkg yeast (1 T.)
1 1/2 c. warm water
2/3 c. sugar
2/3 c. shortening
1 1/2 t. salt
2 eggs
1 c mashed potatoes (reconstitued intstant is fine)
7-71/2 c. flour
Directions:
Directions:
Put all ingredients into a large bowl with about one half of flour and beat with electric mixer. Add rest of flour, cover and put in refrigerator overnight. Doughnuts: Roll out dough and cut out doughnuts. Let dough double in bulk (about 45min-1hr) Fry at about 375 in fry pan with shortning. (about 11/2-2 min per side, should be lightly bron on outside but not doughy on inside). I use wooden spoon with a long handle to keep them on after I take them out with a fork. Place on paper towel. Dip in glaze while still warm.

Glaze: Powdered sugar, lemon juice and water, dash salt. Thin but not watery.

Chocolate Glaze: Powdered sugar, cocoa, milk, das of Salt. Thin but not watery.
