2 lg onions, sliced long
1/2 c mushrooms, sliced
3 tbsp butter or margarine
1 lb ground beef
2 med potatoes, sliced
2 tbsp red wine or cider vinegar
2 tsp salt
1/2 tsp pepper
2 tbsp Worcestershire sauce
1 tsp parsley
1 beef bouillon cube
4 c water
1 loaf Italian or French bread
Cheese slices

Directions:
In a large 2-quart skillet or Dutch oven, saute onions and mushrooms in butter. Remove with slotted spoon and set aside. In butter remaining, brown beef until juices are evaporated. Add potatoes, vinegar, salt, pepper Worcestershire, parsley, bouillon, onions, mushrooms and 4 cups of water. Heat to boiling, then reduce to low. Cover and simmer for 20 minutes or until potatoes are tender. Preheat oven to 375º. Slice 1-inch thick slices of bread from loaf and spread with butter. Ladle soup into oven safe bowls and place on baking tray. Top with cheese and bread. Bake until cheese melts.
