3 fresh mint sprigs
2 tsp sugar
3 tbsp fresh lime juice
1 slice of lime
1 1/2 oz light rum
Club soda
Margarita sugar for rimming glass

Directions:
Directions:
In a tall thin glass, crush part of the mint with a fork to coat the inside of the glass
Remove the mint from the glass
Rim the edge of the glass with lime and dip in the Margarita sugar to rim the glass with sugar
Add the sugar and lime juice to the glass
Mix thoroughly with a small whisk
Top with ice
Add rum and mix well
Top off with *chilled* club soda (or seltzer)
Add a slice of lime and mint back to the glass
Serve

There's nothing better than a refreshing Mojito on a hot day.

Tip: If you like these and plan on making them alot, invest in a muddler. It crushes the mint in the glass much better than a fork does.
