1/2 c. balsamic vinegar
1/2 c. walnut oil
3 T. rice wine vinegar

8 c. arugula
2 Fuji apples
6 oz. Spanish Manchego cheese or sharp white cheddar cheese, shaved
1 c. Carmelized Walnuts - see recipe here
4 lg. shallots or green onions minced

Directions:
Directions:
Boil balsamic vinegar in small saucepan over medium-high heat untly syrupy and reduced to 1/4c., about 4 minutes.

Whish oil and vinegar in bowl

Toss all other ingredients together and top with dressing.
