2 (17 1/2 oz.) Pace Mild Enchilada Sauce
2 lbs. ground beef or cubed chicken (this is good too)
9 large flour tortillas (9 in)
4 c. shredded Colby jack cheese
1 (16 oz.) can refried beans
sour cream for topping
shredded lettuce and tomato if desired

Preheat oven to 350º. In a skillet, brown the ground beef and drain. Stir in 1/3 of sauce. Spread another 1/3 sauce on bottom of greased 13 x 9 inch baking dish. Place 3 tortillas over the sauce, tear to fit bottom of pan. Spoon half of meat mixture over tortillas; sprinkle with 1 1/2 cup cheese. Add 3 more tortillas. Spread refried beans over tortillas. Top with remaining meat mixture. Sprinkle with 1 1/2 cup cheese. Layer remaining tortillas. Top with remaining sauce. Sprinkle with remaining cheese. Bake uncovered at for 35-40 minutes. Let stand for 10 minutes before cutting.

Serve with sour cream and toppings.
