Cherry Tomatoes, chopped 1 onion, chopped
2 tbsp olive oil, plus 2 tsp olive oil 2 tbsp lemon juice
1 1/2 tsp fresh oregano or 3/4 tsp dried salt and black pepper
1 1/2 tsp fresh thyme or 3/4 tsp dried 2 salmon fillets (about 5 oz each)

Preheat oven to 400º. Combine tomatoes, onion, 2 tbsp oil, lemon juice, and spices. Drizzle oil on four large sheets of foil. Place salmon fillet on top of oil. Sprinkle with salt and pepper. Spoon a fourth of tomato mixture on each fillet. Fold foil packets closed. Place on a cookie sheet to bake. Bake about 25 minutes or until salmon is just cooked through. Serve in packet or as desired.
Packets can be prepared up to 6 hours ahead and refrigerated, then bake.
