1/2 C flour
1 T sugar
1/2 C milk
2 T water
1 1/2 t melted butter
3 C fresh sliced strawberries
1/3 C sugar
1 cup cottage cheese
1 C sour cream
1/2 C powdered sugar

Directions:
In a small bowl, beat eggs; slowly add flour and 1 T sugar alternately with milk and water. Whisk or beat with an electric mixer until smooth. Beat in melted butter. Put in refrigerator and chill at least 1 hour. Lightly grease a crepe pan or a medium frying pan. Heat the pan over medium heat for several seconds, lift if off the burner, and pour in 2-3 T batter. Quickly swirl the pan to cover the bottom with a thin, even layer of batter. Set the pan back on the heat and cook the crepe until the bottom is browned.
Carefully flip over the crepe with a spatula. Repeat until all batter is used.
Combine strawberries and 1/3 C sugar in a large bowl. Set aside. Using a blender or electric mixer, blend the cottage cheese until smooth. Add sour cream and powdered sugar and stir well. Put a small amount of fruit down the center of a crepe and top with a spoonful of the creamy mixture. Fold one side of the crepe over the filling and roll it up the rest of the way. Repeat with remaining crepes, using about 2/3 of the strawberries. Top with remaining fruit and sprinkle with additional powdered sugar, if desired.
