6 large onions (about 5 lbs.), sliced thin
1/4 cup unsalted butter
1 Tbsp. flour
1 1/2 quarts beef broth
12 1/2" thick slices French bread, toasted
3/4 lb. coarsley grated Gruyere

Directions:
Directions:
In large pot, cook onions in butter over medium heat, stirring frequently for 40 minutes, or until golden brown. Sprinkle onions with the flour and cook, stirring for 3 minutes. Add broth slowly, stir constantly until boiling, simmer covered for 20 minutes. Season with salt and pepper. Put 2 slices of the toast in each of 6 heated soup bowls, top each toast with 1 Tbsp. Gruyere, and pour soup over toast. (To serve soup gratine, arrange the 12 pieces of toast on bottom of a flame proof casserole, heap each of them with 1 Tbsp. of Gruyere and boil it under a preheated broiler about 4 inches from heat for 3 minutes, or until cheese is melted and bubbling.
