1 2/3 C canned crushed pineapple with syrup
1 envelope Knox Unflavored Gelatin
1/4 t. vanilla
1/2 C flaked or shredded coconut
1/2 C instant nonfat dry milk
1/2 C ice water
2 T lemon juice
1/4 C sugar

Directions:
Directions:
Drain syrup from pineapple and add water to make 1 cup liquid. Sprinkle gelatin on syrup-water mixture to soften. Place over low heat and stir until gelatin is dissolved. Remove from heat and add pineapple and vanilla. Chill to unbeaten egg white consistency. Mix instant nonfat dry milk with ice water in a bowl. Beat until soft peaks form (3-4 minutes) Add lemon juice. Continue beating until firm peaks form (3-4 minutes longer). Gradually add into whipped milk. Fold in coconut. Spoon into dessert dishes. Chill until ready to serve.
