Beef- Sour Cream Beef Enchiladas Recipe

2 lbs ground beef
1 onion, diced
1 green bell pepper, diced
1 t salt
pepper to taste
2 T salsa
1 T chili powder
1/2 t cumin
1 T garlic powder
4 drops hot sauce (optional)
1/2 c chopped olives
1/2 c margarine, melted
1/4 c flour
1 1/2 c milk
2 c sour cream
18 corn tortillas
2 c grated cheddar or jack cheese

Brown beef in skillet; drain. Add onion and bell pepper; cook until vegetables are soft. Add salt, pepper, salsa, seasonings, and olives; simmer 5 minutes and set aside.

Combine butter and flour in sauce pan; slowly add milk, stirring constantly. Cook and stir until thickened. Blend in sour cream; heat 1 minute. Do not allow to boil.

Fill each tortilla with meat mixture, roll. Place in greased 9x13 inch casserole. Cover with sour cream sauce; sprinkle with cheese. Bake at 375 degrees for 25 minutes or until bubbly.

This recipe makes a lot. Feel free to cut in half.
