1 medium pumpkin (have the kids hollow it out)

Meat Mix:
1 lb ground beef
1/2 c chopped celery
1/2 c chopped onion
1/4 c diced green pepper
salt and pepper to taste

Filling:
Meat Mix (see above)
1/4 soy sauce
2 T brown sugar
4 oz sliced mushrooms, drained
1 c cream of chicken soup
2 c cooked rice

Directions:

Preheat oven to 375 degrees. Lightly grease a 10-inch circle in center of baking sheet; set aside. Hollow out the pumpkin and save the top. Cook together meat mix and drain off grease. In a medium bowl, combine Filling ingredients. Spoon mixture into pumpkin. Replace top of pumpkin.

Place filled pumpkin on greased baking sheet. Bake in oven until pumpkin is tender. This takes anywhere from 1 to 2 hours, depending on size of the pumpkin. It is done when a fork poked into it goes all the way through easily.

To serve, spoon cooked pumpkin and meat filling onto plates. Great with tossed salad and rolls!
