1 c. chopped onion
1 c. chopped celery
2 c. diced potatoes
2 c. minced clams with juice
3/4 c. butter
3/4 c. flour
1 qt. half & half
1 1/2 tsp salt
1/2 tsp. sugar
Dash of pepper
1 carrot, grated

This cream based soup is a wonderful Clam Chowder, but you can omit the clams if you'd prefer a delicious Potato Soup.

Add onion, celery, potatoes, and clams in soup kettle. Add water to cover vegetables, Cook 20 minutes or until potatoes are semi-soft. In side bowl, combine melted butter and flour and add to vegetable stock. Add remaining ingredients. Stir over medium heat until thickened.
