2 1/4 c. yellow cornmeal
1 tsp. salt
2 Tbsp. finely chopped onion
3/4 tsp. baking soda
1 1/2 c. buttermilk
Vegetable oil

Directions:
Directions:
Heat vegetable oil (1 inch) in skillet to 375º. Mix cornmeal, salt, onion, & baking soda. Stir in buttermilk. Drop by spoonfuls into hot oil. Fry until brown, approx. 2 minutes. Drain on paper towel.
