3/4 c. granulated sugar
2 eggs
1/2 c. flaked coconut
2 c. flour
1/2 tsp. salt
1/4 c. butter or margarine
1 can (8 2/3 oz.) crushed pineapple, undrained
3 tsp. baking powder

Directions:
Directions:
In a mixing bowl, beat together sugar, butter & eggs until smooth and creamy. Stir in pineapple and coconut. Combine flour, baking powder, & salt. Stir into creamed mixture. Pour into prepared loaf pan.

Bake at 350º for 1 hour. Cool on rack. Glaze with:

1 c. powdered sugar
1 tsp. vanilla
Enough milk to form desired consistency.
