Zesty beef Casserole Recipe

1 lb lean ground beef
1 cup chopped onion
1/2 cup green pepper
1/2 cup red pepper
14 oz can of stewed tomatoes with juice
2 cups medium egg noodles, uncooked
12 oz can of kernal corn
4 oz. can of diced chillies, with liquid (for extra spice) I don't put them in
1 Envelope of taco seasoning mix (35g)
1 1/4 cups water
1/2 tsp salt
1/4 tsp pepper
1 cup of grated Monterey Jack with Jalapeno Cheese (or what ever you have )

Scramble-fry ground beef, onion and both peppers in frying pan on medium high heat for about 5 minutes or until beef is no longer pink. Drain grease off.

Add tomatoes with juice. Stir. Turn into ungreased 3 quart (3L) casserole dish. Add next 7 ingredients. Stir. cover and bake @ 350 F for 30 minutes until noodles are tender but firm.

Sprinkle with cheese and bake uncovered for another 5 minutes or until cheese is melted.
