4 acorn squash
2 medium onions, chopped
1 clove garlic, pressed or minced
2 Tbsp. butter
2 cups dry bread crumbs
2 cups grated carrots
1 cup chopped fresh mushrooms
1/2 cup snipped fresh parsley
1 Tbsp. lemon juice
1 egg, lightly beaten
2 tsp. salt
1/4 pepper
1/4 tsp. marjoram

Cut squash in half and remove seeds. Set aside. Lightly mix remaining ingredients and stuff into squash halves. Bake at 350 degrees for 45 minutes to 1 hour, or until squash is tender.
