1 3/4 c. all purpose flour
1 c. beer, any style
1 lg. egg, lightly beaten
2 T. milk
2 T. cajun seasoning
1/2 tsp. baking powder
1/4 tsp. salt
2 lbs. cod fillets, cut into 4 oz. portions

Heat the oil in your deep fat fryer to 350º.

In a bowl combine 1 cup of the flour, the beer, egg, milk, 1 T. cajun seasoning, baking powder, and 1/4 teaspoon of salt. Whisk to make a smooth batter the consistency of cream, adding more beer if needed to thin. Use the batter as soon as possible after making. Place the remaining flour and 2 teaspoons of cajun seasoning in a shallow dish. Season the fish with the remaining tablespoon of cajun seasoning. Dip each fillet into the flour to lightly coat then into the batter and back into the flour, shaking to remove any excess. Fry the fillets in the hot oil until golden brown and crisp. Remove and drain onto paper towels. Season lightly is needed with salt. Serve immediately.
