left over mashed potatoes about 3 cups or more
1 onion chopped
1 16 oz. can black beans, rinsed and drained
1 can corn or left over corn
1 1/2 C salsa mild or hot your choice
1 tsp. minced garlic
salt and pepper to taste
1/2 tsp. fennel seeds crushed if desired

Directions:

Brown meat, add onions in large skillet. Drain fat. Add garlic and fennel. Salt and pepper. Cook about 4 min over medium heat. Add Salsa, beans, and corn. Simmer about 10 min. Spoon into a 9 X 9 pan. Top with mashed potatoes and sprinkle with cheese. Bake, uncovered, @ 375º for 20 min. Serve with warm tortilla and a fruit salad.
