4 - 6 (8 oz) fresh pan-dressed trout
1 slightly beaten egg
1/4 C light cream
1/4 C flour
1 T cooking oil
2 T butter
1/4 C slivered almonds
1/4 C butter, melted
2 T lemon juice

Directions:
Directions:
Rinse fish and pat dry. Season trout with salt and pepper. Combine egg and cream. Dip trout in flour then in egg mixture.

In large skillet, heat oil and the 2 T butter. Fry fish 8 - 10 min. or until golden, turning once. Drain; transfer to platter.

In another skillet, cook almonds in the 1/4 C melted butter till golden. Remove from heat; stir in lemon juice. Pour almond mixture over fish; serve at once.
