1 extra large Spanish onion or 3 large Bermuda onions
About 1 quart water
1 C flour
1 t salt
2 eggs
2/3 C milk
1 T veg oil
vegetable oil

Directions:
Directions:
Peel onion; cut into 1/2" slices and separate into rings. Place rings in a large bowl of water; refrigerate 30 min. Drain on paper towels.

Combine flour and salt; stir well. Add eggs, milk and 1 T oil; beat until smooth.

Dip rings into batter; fry in deep hot oil (375º) until golden brown on both sides (3 - 5 min). Drain well on paper towels.
