1 lb. fresh spinach
1 med. onion, chopped
1 clove garlic, crushed
1/4 C butter, melted
1/2 C sour cream
dash of salt
1/4 t pepper
paprika

Directions:
Directions:
Remove stems from spinach; wash leaves and tear into large pieces. Cook spinach in a small amount of boiling water 5 - 8 min. or until tender. Drain; place on paper towels, and squeeze until moist.

Saute' onion and garlic in butter in a large skillet until tender. Stir in sour cream, salt and pepper. Add spinach, and cook over low heat until heated throughout; sprinkle with paprika.
