2 cups white sugar
1 cup butter, softened
15 oz. ricotta cheese (I use part-skim & they still come out great!)
2 tsp. vanilla
2 eggs
4 cups all purpose flour
2 tbsp. baking powder
1 tsp. salt
1 1/2 cups confectioner's sugar
3 tbsp. milk

1. Preheat oven to 350 degrees. Line baking sheets w/ parchment (or use non-stick cookie sheets & spray w/ butter-spray)
2. In large bowl, w/ mixer on low speed, beat sugar & butter until combined. Increase speed to high and beat until light & fluffy (about 5 min). Reduce speed to medium & beat in ricotta, vanilla & eggs.
3. Reduce to low speed. Add flour, baking powder & salt. Beat until dough forms.
4. Drop level tablespoons onto prepared baking sheets. Bake for about 15 min. or until cookies are lightly golden (cookies will be soft). With spatula, remove to wire rack to cool.
5. When cookies are cool, prepare icing. In small bowl, stir confectioners sugar & milk until smooth. Spread icing on cookies. Decorate with candied cherry pieces, colored sugar or sprinkles.
