4 thin sliced chicken breasts
1 jar marinated artichoke hearts (not drained)
1 1/2 cups chopped tomatoes (fresh or in a can)
1 small can sliced olives
1/2 tsp. dried basil or 1 tblsp. fresh feta cheese (opt.)

Directions:
Directions:
In olive oil brown chicken on both sides. Mix together other ingredients except feta. Put in pan w/ chicken and simmer for 10 min. or until chickens done. Serve w/ feta cheese.
Orzo or garlic & olive oil couscous are a great for sides. Ready in 30 minutes or less!!!
