1/2 c. bread crumbs
1 egg, beaten
4 boneless, skinless chicken breasts
olive oil for pan
2 T. butter
1 T. flour
1 c. milk
1 c. cojack

Directions:
Directions:
Dip chicken in egg, then bread crumbs to coat. Cook in olive oil in a skillet till done, or brown in skillet and finish cooking in oven. Sauce: Melt butter in a small saucepan over medium heat. Stir in flour till well combined. Slowly whisk in milk, stirring constantly. Cook, stirring, till thickened, about 10 minutes. Remove from heat and add cheese, stirring till completely melted. Pour sauce over chicken and serve immediately.
