Olive Oil for pan
4 boneless skinless chicken breasts
1/2 c. coarsely chopped oil-packed sun-dried tomatoes packed w/ herbs
1/2 c. sliced shallots (green onions)
4 minced garlic cloves
1 c. whipping cream

Directions:
Directions:
Cook chicken in oil in a skillet till cooked through. Remove from skillet and cover to keep warm. Add a little more oil to pan, then add tomatoes, onions, and garlic to pan. Sautee till shallots are tender, about 5 minutes. Add cream and bring to a boil, scraping up any brown bits. Simmer about 3 minutes till sauce thickens, then pour over chicken and serve.

This recipe was a BIG hit! It is so yummy and tastes so gormmet but it was very easy to make. I served w/ rice. Next time I would make a double batch of the sauce to pour over the rice too! I think it would be yummy too w/ mushrooms.
