2 lb lean beef or pork, cubed
2 tbsp vegetable oil
1 large onion, chopped
2 cloves garlic, minced
1 c green chili, chopped (or more)
1 large potato, peeled and diced
3 to 4 cups water
1/4 teaspoon dried oregano (optional)

Directions:
In a Dutch oven, brown the meat in the oil, remove and keep warm. Add the onions to the pot, adding more oil if necessary, and sauté until they are browned. Add the garlic and cook for an additional couple of minutes. Stir in 1-2 tbsp flour and cook until lightly browned. Slowly add the water into the pot and bring to a boil. Add the meat, chili, potato and oregano and bring to back to temperature. Lower heat and simmer for 1 to 2 hours or until the meat is very tender and is starting to fall apart.
