3/4 Gallon Water in Large Soup Pot
Roast
1/4 cup of various dried beans
Whole large onion
Carrots
Celery ( optional)
Other Fresh Vegetables
Rice or Noodles to Thicken (optional)
1 Large Can vegetarian soup ( for slight red color)
2 t. Salt
Pepper to Taste
1 T Garlic Powder )optional

Directions:
Directions:
1. Put Roast in Large Pot and Bring to Boil, add peeled whole onion, and beans since they take a long time to get soft. Add Salt, pepper and Garlic.
2. Boil for 1-2 hours until meat is done. Set aside to cool then cut into bite size pieces. and put in water.
3. Add fresh vegetables, vegetarian soup ( or 2 cans beef broth), and noodles or rice if desired to thicken. Simmer on low heat covered.

4. Cook untill vegetables are cooked and flavors blended.

Mom used to make this soup as a child and the whole house was filled with the wonderful smell of hte soup. It was truly a meal in itself. It is even better with homemade white or whole wheat bread butttered and placed in the botom of the bowl before the soup. Mmmm good!.....
