14 oz. can salmon, drained
3/4 cup saltine cracker crumbs
1/4 cup finely chopped onion
2 Tbsp. olive oil (may need more)
1 egg, beaten

Directions:
In large bowl, place salmon, cracker crumbs, onion and egg - mix and set aside. Heat olive oil in skillet. Cook patties in skillet for 4-5 minutes on each side until golden brown and hot. Serves 4
