3 T butter
1/4 c. Flour
1 C. Whipping cream
1 1/4 t. Salt
2 T. Onion, finely chopped
1/4 t. Nutmeg
4 potatoes, cooked and cut into 1 inch cubes

Directions:
Directions:
Melt butter over moderate low heat. Stir in flour and cook until flour is color of straw. Gradually add cream. Cook, stirring until cream bubbles and sauce thickens to coat the spoon. (You may turn up heat briefly to help this along.) Add salt, pepper, onion and nutmeg. Mix well and add potatoes. Mix well, and pour into one-quart baking dish. (A 9x13 dish will easily hold three times recipe). Dot with 1 T of butter and cook in 350º oven for 30 minutes or until bubbly. May be made several hours or two days ahead. Store, covered, in refrigerator. Allow to come to room temperature or cook a little longer (until bubbly) if it is cold from the refrigerator.
