3 C finely chopped cooked chicken
1 1/2 C freshly grated Parmesan cheese, divided
1/4 lb. finely chopped fresh mushrooms
1 T butter or margarine, melted
1/2 t salt
1/4 t pepper
1/4 t ground nutmeg
1/3 C butter
1/3 C flour
3 C milk
1 C whipping cream
1 pkg. crepes

Directions:

Combine chicken and 1 C cheese, set aside.

Saute mushrooms in 1 T butter until tender. Stir in salt, pepper and nutmeg.

Melt 1/3 C butter in a heavy saucepan over low heat; add flour and cook 1 min., stirring constantly. Gradually add milk; cook over med. heat, stirring constantly, until thickened and bubbly. Stir in whipping cream.

Combine chicken mixture, mushroom mixture and 2/3 C sauce, stirring well. Spoon 1/3 C mixture into center of each crepe and roll up tightly; place crepes, seam side down, in a lightly greased 13 x 9" baking dish. Pour remaining sauce over crepes, and bake at 350º for 25 min. Sprinkle with remaining 1/2 C parmesan cheese, and bake an additional 5 min.
