Ingredients: 4 skinned, boned chicken breast 1/3 cup fine, dry breadcrumbs (Progresso Bread Crumbs Found near the flour) or 4 slices of bread chopped finely in the food processor 2 teaspoons Italian seasoning 1 teaspoon dried whole basil 1 teaspoon garlic powder 4 eggs beaten in a low-sided bowl Vegetable cooking Oil 1/4 cup grated Parmesan Cheese Spaghetti Sauce

Directions:Place chicken in a large ziplock bag unzipped; flatten to 1/4" thickness, using a meat mallet or rolling pin. Combine breadcrumbs and next 3 ingredients in a low-sided bowl. Dip chicken in egg; dredge in breadcrumb mixture. Repeat egg dip and breadcrumb dredge.
Coat a large nonstick skillet with vegetable oil; place over medium high heat until hot. Add chicken, and cook 2-4 minutes on each side or until lightly browned. Place chicken in an 11 x7 x2 inch baking dish.
Sprinkle with Parmesan cheese. Cover and bake at 350 for 30 minutes or until thoroughly heated; Bake uncovered, an additional 5 minutes or until crisp.
Serve with spaghetti sauce and noodles of your choice.
Optional: place mozzarella cheese on top during last 5 minutes of baking. |

Notes: This freezes well. When reheating use a microwave to warm then finish in the oven to crisp. It can dry out if left too long in the oven.
