6 cups warm water
3 Tbsp or 3 packets active dry yeast
2/3 cup sugar

1 1/2 cup whole wheat flour
1/3 cup whole wheat berries
1/3 cup cracked wheat
1/2 cup oat bran
4 tbsp ground flax seed
2 - 3 cups white flour
1/2 cup canola or olive oil
3 Tbsp applesauce.
10-12 cups flour

Directions:

Dissolve yeast and sugar in 6 cups warm water until it starts to bubble. Mix in whole wheat flour, whole wheat beries, cracked wheat, oat bran, and ground flax seed. Mix in 2 to 3 cups white flour, 1 cup at a time. Mix in 1/2 cup canola or olive il warmed slightly in microwave and 3 Tbsp applesauce. Mix well. Gradually add white flour 1 cup at a time until dough pulls away form the bowl. Turn out onto floured counted and knead in flour until dough is elastic and doesn't stick to your hands. Requires about 10 - 12 cups total. Cover and let rise. Punch down and let rise again. Punch down and put in greased pan. Let rise and bake in 360 degree over for 35-40 minutes. Remove from pan and let cool on rack. Makes six loaves
