3 tbsp. Minced garlic
2 cans cream of mushroom soup
1 can rotel
2 tbsp. Liquid smoke
4 lbs. Alligator
2 lbs. Onions
2 bunches shallots
2 cans french onion soup
2 cans cream of celery soup
1 large can V-8 juice
1 cup roux
1 lb. Pork
2 stalks celery
2 bell peppers

Directions:
Directions:
Boil alligator meat. Skim off foam.

Make a roux- 1 cup flour-1 cup oil

Add chopped onions, celery, bell peppers, shallots.

Cook until wilted (30 minutes).

Add all other ingredients(except alligator) and cook for about 1 hour.

Add alligator meat and cook for 2 hours.

Add parsley flakes 30 minutes before done.
