1/2 c. shortening
1 c. sugar
2 eggs
1 c. mashed ripe bananas
1/4 c. chopped nuts
2 c. flour
1 tsp. baking soda
1/4 tsp. salt

Directions:
Directions:
Cream shortening and sugar until light & fluffy. Add eggs and beat well. Stir in mashed bananas and mix well. Stir in nuts. Sift dry ingredients together and stir into wet ingredients. Pour into greased loaf pan and bake at 350º for 40 minutes.

Before I bake loaf, I mix 4 Tbsp. sugar with 1/2 tsp. cinnamon and sprinkle on top of loaf. This adds a little extra sweetness to the finished loaf.
