Ingredients: Meat Loaf: 1 pound ground beef 1/2 cup seasoned bread crumbs 1 c Monterey Jack cheese 3 T ketchup 1 egg 1/2 t celery salt 1/4 t pepper
Potato Frosting: 3 c mashed potatoes (you can make from scratch or used powdered...DON'T add pepper) food coloring

Directions:The idea here is to make Mashed Potato Topped Meatloaf dying the potatoes to look like frosting on cup cakes. Feel free to use your favorite Meat Loaf recipe. Here is the way I do these.
1. Heat the oven to 375º. Line 12 muffin tin cups with foil bake cups. 2. In a large bowl, mix all the meat loaf ingredients until well combined. Divide the mixture evenly among the lined cups (the liners should be about 2/3 full). 3. Place the filled muffin tins on cookie sheets and bake for 15-17 min. 4. Divide the mashed potatoes among 2 or 3 small bowls and stir a few drops of food coloring. Spread a generous dollop on each "cupcake". |
