1/2 c dijon mustard
1/2 c honey
1 1/2 tsp vegetable oil
1/2 tsp lemon juice
4 skinless, boneless chicken breasts
2 c sliced mushrooms
8 slices bacon
1 c Monterey jack cheese, shredded
paprika
1-3 Tbsp butter or margarine

In a small bowl, whip together mustard, honey, oil and lemon juice. Pour about 2/3 of it over the chicken breasts and refrigerate covered for about 2 hrs. Chill the remaining mixture until later. After the chicken has marinated, discard marinade used and sear in the frying pan in enough oil for pan until golden brown. Saute mushrooms in butter. Put chicken in a baking dish and season with salt, pepper and a dash of paprika. Stack 2 slices of cooked bacon crosswise on each chicken breast. Cover each chicken breast with 1/4 c each of Monterey Jack cheese then chedar cheese. Bake in 350º oven for 7-10 min. Serve remainder of marinade not used on uncooked chicken on the side for dipping.
