35 Ritz Crackers (crumbled by hand)
1 c. coarsely chopped nuts
4 egg whites (stiffly beaten)
1 c. sugar
1 tsp. vanilla
1 can angle flake coconut

Directions:
Directions:
Preheat oven to 350º.
Mix crackers and nuts and set aside.
Beat egg whites and gradually add sugar and last add vanilla. Fold in cracker and nuts. Spread in a greased 9x13 pan. Bake at 350º for 25 minutes. Cool completely. On top spread 1 large cool whip and sprinkle with coconut.
Refrigerate at least 8 hours.

For Easter I color the coconut green and sprinkle with baby jelly beans. This recipe was from a friend of mine that I worked with in Athens, OH at Ohio University.
