6 c peeled and cubed zucchini
1/4 c chopped onion
1/2 c shredded carrots
16 oz chicken flavored stuffing mix
1 c shredded cheddar cheese
1 can cream of chicken soup
1 c sour cream

Directions:
Directions:
Steam vegetables until soft, about 20 min. Mix with sour cream and soup and cheese. Fix stuffing according to package directions. Layer 1/2 of the stuffing, then the vegetable mixture, then the remaining stuffing. Bake for 30 min. at 350º.
