1 large package spinach- cleaned and trimmed
1 qt. strawberries- cleaned, hulled and sliced
1 can mandarin oranges

Candied Almonds:
1 c. sliced or slivered almonds
1/2 c. sugar
2 T. butter

Poppy Seed Dressing:
1 c. oil
1/2 c. red wine vinegar
1/2 c. sugar
1 tsp. salt
1/2 tsp. dry mustard
2 tsp. grated onion
1 T. poppy seeds

Directions:

Mix dressing in blender for 1 minute. Refrigerate for 1 hour before use.

Heat almonds, sugar and butter in skillet over medium heat. Stir constantly until almonds are toasted and sugar is golden brown, about 10 minutes. Spread on greased sheet of foil or wax paper. Cool and break into clusters.

In a large bowl, combine spinach, strawberries, oranges, and almonds. Pour dressing over salad and toss.

I sometimes make this with romaine lettuce.

For a shortcut, use Briannas dressing. I use the one with the strawberry on the front. It is a blush wine vinaigrette dressing. I have heard her poppy seed is good and also tasty if you mix these two together.
