1 lrg. pkg. Jell-O (any red flavor)
1 lrg. tub low-fat Cottage Cheese
1 lrg. can Crushed Pineapple (in its own juice)
1 sml. tub Lite Cool Whip (slightly thawed)

Drain pineapple very well. Mix dry Jell-O, pineapple and cottage cheese together. Add Cool Whip and mix together well. You can add pecans to the top if desired.

I remember when my Grandma Tommy (Marie Hummer Tomlinson) came to live with my grandmother (Helen Tomlinson Simpson) that she brought this recipe. I begged her to make it every time that we were together as a family! It is still one of my favorites!
