3 - 4 lbs. beef shanks w/ bone-in
5 c. diced celery
5 c diced carrots
1 head of cabbage, quartered
½ of small rutabaga, diced (optional)
3 med onions, quartered
3-4 tbls. Beef base
3-4 c. potatoes, cut into cubes
2 qts whole tomatoes
Salt & pepper, to taste.

Do the night before:
Put beef shanks in a large soup kettle w/ 10 c. water. Simmer on low 2-3 hours covered. Remove shanks and place in covered container in the refrigerator. Place pot with broth in the refrigerator overnight. Skim fat off the top before placing the broth on the stove to cook.

Add remaining ingredients except for the potatoes, tomatoes and beef shanks. Simmer on low for 1-1/2 - 2 hours covered. Then add potatoes, tomatoes, beef (bones removed and coarsely chopped) and salt & pepper to taste. Simmer on low for an additional hour or until potatoes are tender.
