2 eggs
1 cup ripe bananas, mashed
1/3 cup buttermilk
1 tablespoon vegetable oil
1 tablespoon vanilla
3/4 cup sugar
1 3/4 cup flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup walnuts, chopped (optional)
2 tablespoons mini-chocolate chips (optional)

Directions:
Directions:
Preheat oven to 325 degrees.

Combine eggs, banana, buttermilk, oil and vanilla; mix well. Stir in sugar. Add flour, baking powder, baking soda and salt; stir until just combined. Stir in nuts.

Pour into greased loaf pan. Sprinkle with chocolate chips.

Bake 40 to 45 minutes until golden brown and a toothpick comes out with only a few crumbs on it.
