4 chicken breasts or 1 chicken cut into 8 pieces
2 tablespoons EVOO
1 onion, cut into slivers
1 tablespoon minced garlic
2 sprig fresh rosemary, mince 1 sprig and leave the other intact
salt and pepper to taste
2/3 cup prepared marinara sauce
1/2 cup H2O

Directions:
Directions:
1. Rinse chicken and place in shallow baking dish
2. Place EVOO in skillet over low heat and wilt onions. Add garlic and cook approx. 5 minutes. Add minced rosemary leaves.
3. Preheat oven to 375º F.
4. Toss chicken with onion mixture. Season with salt and pepper. Top with marinara sauce. Pour the water into the bottom of the pan and bake until chicken is cooked through, approx. 60 minutes. Baste frequently.
5. Serve chicken on a small platter, spoon sauce on top and garnish with whole rosemary sprigs.
