1 - 20 oz can pineapple chunks, drained.
Reserve the juice.
1 1/4 cups ketchup
1 T brown sugar
1 T cider vinegar
4 medium size carrot, sliced
1/2 green pepper cut into chunks
4 - 1 inch pork chops
2 T oil

Directions:
Directions:
Cook pineapple juice, ketchup, brown sugar and vinegar in small sauce pan for 5 minutes or until hot. Add carrots, pineapple and green pepper. Remove from heat. Brown pork chops in oil in large skillet. Arrange in single layer in shallow baking dish. Spread pineapple-vegetables mixture over the top. Cover with foil and bake in preheated over at 350º for 1 hour or until chops are tender and vegetables are tender crisp. Serve over rice.
