1 small head radicchio, thinly sliced
1/2 medium red onion, peeled and thinly sliced
1/2 medium red bell pepper, cored, seeded, and thinly sliced
2 medium Italian plum tomatoes, cored, seeded, and thinly sliced
1 medium jalapeno pepper, cored, seeded, and thinly sliced
3 T. red wine vinegar
2 T. olive oil
1/2 tsp salt
1/2 tsp freshly ground pepper
1/2 tsp. sugar
8 ounces Gouda cheese, thinly sliced
1 Backcountry Pizza Crust (see recipe under Breads) or 16 ounce purchased pizza crust such as Boboli

Directions:

In large bowl, combine radicchio, red onion, bell pepper, tomatoes, jalapeno, vinager, olive oil, salt, pepper and sugar. Let stand at room temperature, 30 minutes, stirring occasionally.

Preheat oven to 500º. Drain radicchio mixture, discarding liquid.
Arrange half the cheese evenly over crust. Cover with radicchio mixture, spreading evenly. Top with remaining cheese. Bake 10 to 15 minutes or until cheese melts. Let stand 5 minutes before cutting
